Ingredients

  • 300g Lamb Weston fries cooked as per instruction
  • 1 Small cauliflower cut into florets
  • 1 tbsp Olive oil
  • 2 tsp of tacos seasoning
  • 2 soft tortillas
  • 1 Jalapeño sliced
  • 1 Cup red cabbage chopped, and marinated with juice of 1 lemon
  • Coriander for garnish
  • Ingredients for avocado sauce
  • 1 avocado
  • Handful of fresh coriander chopped
  • 2 tbsp sour cream
  • 1/2 tsp salt
  • Juice of 2 limes

Preparation

Beautiful cauliflower florets, tossed in taco seasoning and roasted until tender and gold. No one will miss the meat in this vegetarian taco delight.

  1. Cook fries as per instruction.
  2. Heat oven to 200 C.
  3. Toss cauliflower with olive oil and taco seasoning, bake until soft and golden brown.
  4. For the avocado cream - combine all ingredients and blend until smooth and creamy.
  5. Warm tortilla in the oven or stove top for 2-3 min and assemble tacos at the table.
  6. Finish with Lamb Weston fries at the top and a drizzle with avocado cream. Garnish with coriander and fresh jalapeños.
