Poke Bowl Fries

Ingredients

1. Ingredients for chicken:

  • 250g chicken breast - chopped into bite sized cubes 
  • 2 tsp cumin
  • 1/2 tsp cinnamon
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 2 tsp olive oil
  • 2 garlic cloves minced
  • 1 tsp sumac
  • Juice of 1 lemon

2. Ingredients for side

  • 300g Lamb Weston fries
  • Small bowl of home made hummus 
  • 1 tomato cut into wedges
  • 1 cucumber sliced
  • Pickled radish
  • Pickled arabic chilies
  • Handful of fresh rocket leaves 
  • Fresh mint and sumac for garnish

Preparation

Middle-Eastern spiced chicken and Lamb Weston fries bowl, garnished with sumac and chopped mint leaves.

INSTRUCTIONS:

  1. Place the chopped chicken in a bowl with all ingredients. Cover and marinate for 1-2 hours.
  2. Bring to room temp and heat a large frying pan. On high heat add in the chicken pieces, cook for 5-8 minutes turning occasionally.
  3. While the chicken is cooking, prepare fries as per package instruction.
  4. To assemble, in a large bowl, place a dollop of hummus in the middle. Surround with veggies as suggested and large handful of Lamb Weston Fries. Garnish the bowl with sumac, salt and chopped mint leaves
