This colourful, Mediterranean-loaded Twister Fries dish brings together crispy curly fries, fresh toppings, and creamy tzatziki. It feels indulgent yet light, making it perfect for casual dining and bar menus.
Ingredients
- 200 g Lamb Weston Twister Fries (frozen)
- 40 g feta cheese, crumbled
- 30 g roasted red peppers, sliced (jarred or freshly roasted)
- 20 g olives, halved and pitted
- 20 g cucumber, diced into small cubes
- 1 tbsp tzatziki
- 1 tsp fresh parsley, finely chopped
Preparation
- Cook the fries: Deep-fry the Twister Fries at 175°C for 3 - 3.5 minutes, or oven-bake them at 200°C for 18 - 20 minutes, until golden and crispy.
- Prep toppings: While the fries cook, finely dice the cucumber, halve and pit the olives, and slice the roasted peppers. Crumble the feta into small pieces.
- Plate up: Arrange the fries on a wide sharing plate or shallow bowl, spreading them out for maximum coverage.
- Add toppings: Evenly sprinkle the feta, roasted peppers, cucumber, and olives over the fries.
- Finish: Drizzle tzatziki over the top of the dish in thin lines, then sprinkle with chopped parsley.
- Serve immediately to ensure the fries remain hot and crispy.
