Pizza Topped Fries by Chef Philli-2


  • 2Kg Lamb Weston Hot2Home Fries
  • 800g Marinara Sauce (see below)
  • 800g Mozzarella
  • 240g Chorizo, diced and fried until crisp
  • 40 Basil leaves

For the Marinara Sauce (800g)

  • 30ml Olive Oil
  • 1 Onion, finely chopped
  • 3Tbs Tomato Purée
  • 1 Clove Garlic, minced
  • 800g Tinned Tomatoes, chopped
  • Half a bunch of basil, chopped
  • 2Tbs Sherry Vinegar
  • Salt & Pepper to taste


Lamb Weston Hot2Home fries have been specifically designed to stay hot and crisp for up to 20 minutes which makes them an excellent choice for loaded fries as they will retain their crunch under the rich tomato sauce.

To make the sauce

  1. Heat the olive oil in a pan and sweat the onions until soft, with no colour.  Season with salt & black pepper
  2. Add the tomato purée and minced garlic and cook out, then add the tinned tomatoes and reduce for 10-15 minutes
  3. Finish with the basil and sherry vinegar

To make the Pizza Topped Fries

  1. Cook the Lamb Weston Hot2Home fries according to the pack
  2. Place on a plate or in a takeaway container, load with Marinara sauce, mozzarella, chorizo and freshly torn basil
