Sausage, Bean and Tots Burrito by Chef Philli

  • 1 Krakauer bacon frankfurter from The Sausage Man
  • 2 Eggs, beaten
  • 1 Tbs Butter
  • 50g Lamb Weston Potato Puffs
  • 25g Avocado
  • Juice from ½ a lime
  • Pinch of salt
  • 1 Tortilla
  • 50g Baby spinach leaves
  • 25g Mozzarella
  • 20g Tomato & red onion salsa


This take on the burrito is formed of crispy cubes of potato wrapped up with a krakauer bacon frankfurter and beans for the ultimate breakfast on the go!

  1. Fry off the frankfurter and slice
  2. Scramble the eggs with the butter
  3. Fry the potato puffs according to pack instructions until crisp
  4. Smash the avocado together with the lime juice and a little salt
  5. Lightly heat the tortilla then layer up with the spinach, scrambled eggs, mozzarella, potato puffs and smashed avocado.  Top off with the salsa and roll up, tucking the ends in
  6. Toast on each side before wrapping in parchment to serve
