Sausage, Bean and Tots Burrito by Chef Philli
Ingredients
- 1 Krakauer bacon frankfurter from The Sausage Man
- 2 Eggs, beaten
- 1 Tbs Butter
- 50g Lamb Weston Potato Puffs
- 25g Avocado
- Juice from ½ a lime
- Pinch of salt
- 1 Tortilla
- 50g Baby spinach leaves
- 25g Mozzarella
- 20g Tomato & red onion salsa
Preparation
This take on the burrito is formed of crispy cubes of potato wrapped up with a krakauer bacon frankfurter and beans for the ultimate breakfast on the go!
- Fry off the frankfurter and slice
- Scramble the eggs with the butter
- Fry the potato puffs according to pack instructions until crisp
- Smash the avocado together with the lime juice and a little salt
- Lightly heat the tortilla then layer up with the spinach, scrambled eggs, mozzarella, potato puffs and smashed avocado. Top off with the salsa and roll up, tucking the ends in
- Toast on each side before wrapping in parchment to serve
