Smoked Salmon Bagel with Sauerkraut Fries

Ingredients:
- 300g Lamb Weston fries cooked as per instruction 1 sesame seed bagel
- 1 pack of smoked salmon
- 1/2 cucumber sliced
- 1/2 red onion sliced
- 2 tbsp capers
- Handful of rocket leaves Dill for garnish
For fennel and sauerkraut coleslaw:
- 1 cup Sauerkraut
- 1/2 chopped red onion
- 1 fennel shredded
- 1/2 cup shredded carrot
- 1 tsp dijon mustard
- 2 tbsp mayonnaise
- 1/2 green apple thinly julienned Black pepper & salt to taste Juice of 1/2 lemon
- Some dill
Preparation
The classic and delicious smoked salmon, cream cheese, and capers combination reimagined here as an elegant sandwich, which would be perfect for a casual brunch or any special occasion.
INSTRUCTION:
- Cook fries as per instruction
- For sauerkraut slaw, mix all ingredients in a bowl and set aside.
- Cut bagel into half and toast. Add cream cheese, cucumber, salmon red onion, capers, rocket leaves. Accompany with a large pile of fries topped with that delicious fennel coleslaw. Sprinkle with sea salt and garnish with dill.
