Katsu Curry Wurst with Togarashi Fries by Chef Philli

Ingredients

  • 100g Katsu roux (from a block)
  • 300g Water
  • 10g Ginger, pureed
  • 1 Bratwurst from The Sausage Man
  • 100g Flour
  • 2 Eggs
  • 200g Panko breadcrumbs
  • 100g Stealth Fries from Lamb Weston
  • 50g Togarashi spice
  • Salt to season
  • 25g Sriracha sauce
  • 25g Kewpie Japanese mayonnaise
  • 10g Pickled ginger slices
  • 5g Coriander, picked
  • 5g Fresh chilli, sliced
  • 5g Spring onions, sliced

Preparation

  1. Mix the curry roux with the water and ginger and bring to the boil to emulsify
  2. Flour, egg and crumb the Bratwurst then deep fry until golden
  3. Fry the Stealth Fries according to pack instructions and season with Togarashi and salt
  4. To serve, spread the Katsu sauce on a plate and sit the crispy Bratwurst on it.  Add the Fries to a cup or basket and put on the plate.  Drizzle the Sriracha and Kewpie over the Bratwurst and garnish with pickled ginger, coriander, chilli and spring onions
