Ingredients
- 100g Katsu roux (from a block)
- 300g Water
- 10g Ginger, pureed
- 1 Bratwurst from The Sausage Man
- 100g Flour
- 2 Eggs
- 200g Panko breadcrumbs
- 100g Stealth Fries from Lamb Weston
- 50g Togarashi spice
- Salt to season
- 25g Sriracha sauce
- 25g Kewpie Japanese mayonnaise
- 10g Pickled ginger slices
- 5g Coriander, picked
- 5g Fresh chilli, sliced
- 5g Spring onions, sliced
- Mix the curry roux with the water and ginger and bring to the boil to emulsify
- Flour, egg and crumb the Bratwurst then deep fry until golden
- Fry the Stealth Fries according to pack instructions and season with Togarashi and salt
- To serve, spread the Katsu sauce on a plate and sit the crispy Bratwurst on it. Add the Fries to a cup or basket and put on the plate. Drizzle the Sriracha and Kewpie over the Bratwurst and garnish with pickled ginger, coriander, chilli and spring onions
