It is traditional to sprinkle salt over chips and fried potatoes before serving. Add an intriguing twist by using a different salt product. Add another flavour in addition to the salt and create an entirely new flavour sensation. Here we have used capers that have been dried and then ground into a powder.
Thoroughly rinse the salt-packed capers under running water.
Spread the capers out on a baking tray.
Dry the capers in an oven set to 80°C for approximately eight hours.
Grind to a powder in a pestle and mortar or in a spice mill.
Finishing & presentation
Deep fry the Twisters until golden and crispy and sprinkle over the caper powder and black pepper.
