Ultimate Breakfast Sandwich by Chef Philli
Ingredients
- 1 25cm Krakauer Bacon Frankfurter from The Sausage Man
- 100g Caramelised onions (4 sliced onions cooked slowly in 2 Tbs oil and 1 tsp salt)
- 3 Lamb Weston mini hash brown triangles
- 1 Round brioche bun
- 20g Mustard
- 20g Mayonnaise
- 20g Ketchup
- 5g Crispy onions
- 5g Chives, chopped
Preparation
Minis Hash Browns mingle with all the flavours of breakfast, plus a Krakauer Bacon Frankfurter!
- Start by poaching the frankfurter for at least 20 minutes – you can hold ready to order. When needed, fry in a little oil just to colour
- Heat the caramelised onions on the griddle
- Deep fry the hash browns according to pack instructions
- Split the brioche bun and toast lightly
- To assemble, load up the bun from the base; drizzle half the mustard, mayo and ketchup over the bun. Add half the caramelised onions and top with the mini hash browns. Balance the frankfurter on top and add the remaining caramelised onions and the rest of the sauces. Finish with the crispy onions and chives before finishing off with the brioche bun top
- Snail option: Swap out the frankfurter for a Bratwurst Snail Sausage and add in two squares of burger cheese and a sunny side up free range egg. To assemble, load the bun up from the base; drizzle half the mustard, mayo and ketchup over the bun then add the caramelised onions and three mini hash browns. Add the sausage snail and melt two squares of burger cheese over the top. Crown with a sunny side up egg and finish with the rest of the sauces. Finish with the crispy onions and chives before finishing off with the brioche bun top
