Loaded Spicy Prawns
Ingredients
- 200g Lamb Weston skin on fries
- 300g peeled prawns with tail on 1 tsp olive oil
- 1/2 tsp cajun powder
- Salt & Pepper for taste
For the mango salsa:
- 1 Large mango chopped into cubes
- 1 Small red onion
- Handful of chopped coriander
- Juice of 2 limes
- 1 Small red chili chopped (seeds removed)
For the guacamole:
- 1 ripe avocado, mashed
- 1/2 red onion, chopped
- 1/2 red chili, chopped and seeded
- 1/2 tomato, chopped
- 1 tsp olive oil
- Juice of 2 limes
Spicy Mayo sauce:
- 3 spoon of regular mayonnaise
- Juice of half lemon
- 1/2 tsp of Cajun powder
Preparation
Spicy prawns loaded with Lamb Weston skin on fries, guacamole and a sprinkle of a zesty mango salsa.
INSTRUCTION:
- Cook skin on fries as per package instruction
- In a large pan add teaspoon of olive oil and gently toss prawns for about 3-5 minutes. Season with cajun pepper and salt.
- In a large bowl build up dish in order: fries, prawns, guacamole then drizzle with spicy mayo and sprinkle with salsa and a little extra squeeze of lime.
