- 300g Sweet Potato CrissCuts
- 150g Chorizo
- 150g Sour cream
- 1 Bunch Cilantro
- 1 lime
- 1 tbsp Butter
- 1 tbsp All-purpose flour
- 250ml Whole milk (add more if needed)
- 250g Shredded Cheddar cheese
- Salt and black pepper
For Queso Sauce, melt butter in small saucepan over medium heat.
Whisk in the flour and cook for 1 minute.
Add the milk, increase heat to medium high and cook, whisking constantly, until slightly thickened, for about 5 minutes.
Remove from heat and whisk in the cheddar cheese until melted.
Season with salt and pepper.
Thin with additional milk if needed. Keep warm.
Place the sour cream in small bowl.
Add in juice of ½ of lime, mix. Place one half of the Lamb Weston Sweet Potato CrissCuts on serving platter.
Place half the cooked chorizo on top and drizzle with Queso Sauce.
Top with the second half of Lamb Weston Sweet Potato CrissCuts along with remainder of chorizo and additional queso.
Drizzle lime crema on top and garnish with chopped cilantro.
