Crunchy Fries with Harissa Chicken, Flatbreads & Tzatziki

Ingredients

  •  100-125g per person (250g total) of Really Crunchy Fries, cooked as per the cooking instructions

Kebab Skewers

  • 2 x free range chicken breast, cubed
  • 1/2 tbsp harissa paste
  • 1 tbsp olive oil

Flatbread & Salad Garnish

  • 2 flatbreads, toasted
  • 1 x red pepper, cubed
  • 1/2 red onion, sliced
  • Salad leaves, a good handful

Tzatziki

  • 3 tbsp Greek yoghurt
  • Good pinch garlic salt
  • 5 fresh mint leaves, chopped
  • Pinch of salt for the cucumber.
  • 50g cucumber, deseeded, grated, salted, set aside to drain

 Green Goddess Sauce

*Any spare soft herbs can used to make this, as well as rocket leaves. Less herbs will make a milder flavoured sauce.

  • 3 tbsp Greek yoghurt
  • 25g parsley
  • 25g mint
  • 25g dill
  • Juice of half a lemon
  • 1 tbsp extra virgin olive oil
  • Salt & pepper to taste
  • Dash of water to loosen

To Garnish

  • 1 tsp diced cucumber
  • Fresh dill and mint leaves

     

Preparation

Chicken Kebabs

Step 1

  • Add the harissa to the chicken in a bowl, along with the olive oil, stir through, cover, and leave to marinate in the fridge for an hour or so.
  • Whilst marinading, prep everything else below.

Salad Garnish

  • Prep the red pepper.
  • Slice the red onion and wash the lettuce leaves.
  • Set aside. 

Tzatziki

  • Place the yoghurt in a bowl with the garlic salt, mint, and deseeded, drained cucumber.
  • Set aside.

Green Goddess Dressing

  • Place all the dressing ingredients into a blender, and blend into a green sauce.
  • Set aside.

Chicken Kebabs

Step 2

  • Bring the chicken to room temp.
  • Heat a large frying pan on a high heat, add the chicken and cook for 6 - 8 mins, turning occasionally, until cooked. Cut a piece or 2 of chicken in half to check there is no pink visible, or pierce with a skewer to see the juices run clear.
  • In the last couple of minutes of cooking, add the red pepper.

Fries & Flatbreads

  • Cook the Really Crunchy Fries as per pack instructions.
  • Toast the flatbreads.

To Serve

  • Spread the toasted flatbread with tzatziki, and Green Goddess dressing, add the pepper, lettuce and red onion salad garnishes, the harissa chicken, and the serve of fries on the side.
  • Enjoy Gyros style with some fries added to the flat bread before wrapping the kebab.
