Gamba Fries



For the mango salsa:

  • 1 Large mango chopped into cubes 
  • 1 Small red onion
  • Handful of chopped coriander 
  •  Juice of 2 limes
  • 1 Small red chili chopped (seeds removed)

For the guacamole:

  • 1 ripe avocado, mashed
  • 1/2 red onion, chopped
  • 1/2 red chili, chopped and seeded 
  • 1/2 tomato, chopped
  • 1 tsp olive oil
  • Juice of 2 limes

Spicy Mayo sauce:

  • 3 spoon of regular mayonnaise 
  • Juice of half lemon
  • 1/2 tsp of Cajun powder


Spicy prawns loaded with skin on Lamb Weston fries, guacamole and a sprinkle of a zesty mango salsa.


  1. Cook skin on fries as per package instruction
  2. In a large pan add teaspoon of olive oil and gently toss prawns for about 3-5 minutes. Season with cajun pepper and salt.
  3. In a large bowl build up dish in order: fries, prawns, guacamole then drizzle with spicy mayo and sprinkle with salsa and a little extra squeeze of lime.
