Stealth Fries with Vegan Mushroom Lentil Burger & Salsa

Ingredients

  • 200g Stealth Skin On Fries, cooked as per the instructions

For the Burger Patty

  • ½ small red onion, roughly chopped
  • 70g (8 medium) cup mushrooms, quartered
  • 100g pre-cooked Puy lentils (pouch lentils work well)
  • 6 tarragon leaves, finely chopped
  • 1 tbsp dried parsley
  • 30g panko breadcrumbs
  • Salt and pepper to taste
  • 1 tbsp olive oil

For the Burger

  • 2 brioche buns, toasted
  • 2 tbsp Salsa Rosso
  • 2 vegan burger patties
  • 2 slices vegan cheese
  • Crispy fried onions (recipe below)
  • 4 slices tomato
  • 2 handfuls rocket

For the Salsa Rosso

  • 2 jarred grilled red peppers
  • 1 tbsp extra virgin olive oil
  • 1 tbsp sun-dried tomato paste
  • 1 clove garlic, crushed
  • Pinch of red pepper flakes / Aleppo pepper or dried chili flakes
  • Salt and pepper to taste
  • 1 tsp harissa paste
  • ½ tsp white wine vinegar

For the Crispy Fried Onions

  • 2 brown onions, sliced into rounds
  • 1 tbsp vegetable oil

 

Preparation

  1. Salsa Rosso

    Combine all the ingredients in a small food processor and blitz until combined. Set aside.

  2. Crispy Fried Onions

    Heat a frying pan on high heat, add the oil, followed by the onions. Cook for a few minutes, stirring to avoid them catching and charring. Set aside.

  3. Burger Patties

    In a food processor, blend the onion, mushrooms, half the lentils, tarragon leaves, and parsley. Blitz until combined, then decant into a bowl.

    Add the remaining lentils and panko breadcrumbs. Season with salt and pepper. Mix with your hands until the breadcrumbs have absorbed any moisture and the mixture can be formed into 2 burger patties. If needed, add a little extra panko to achieve this consistency.

  4. Heat the olive oil in a frying pan over medium-high heat and cook the burger patties for 6-8 minutes until cooked through. Add the vegan cheese slices for the last minute to melt, if desired.
  5. To Assemble the Burger

    Toast the brioche buns. Spoon 1 tbsp of Salsa Rosso onto the base of each bun, followed by the cheese-topped burger patty.

    Add the tomato slices, crispy fried onions, and a handful of rocket. Top with the other half of the bun.

To Serve

Serve the Stealth Skin On Fries alongside the burger with a ramekin of Salsa Rosso as a dipping sauce.
