Veggietalian Fries


  • Olive oil
  • 1 Onion, peeled & sliced
  • 500g Carrots, peeled & finely grated
  • 400g Celery, stringed & finely grated
  • Sugar, salt & freshly ground pepper to season
  • 3 Garlic cloves, peeled & finely diced
  • 2 Red chillies, seeded and finely chopped
  • 150ml White wine
  • 800g Tomato passata
  • 700g Vegan mince
  • 2kg Lamb Weston Stealth Fries (11x11) skin-on
  • 200g Grated parmesan
  • Fresh basil leaves


Use any vegan meat alternative in this Italian-inspired dish for maximum Mediterranean flavour.

  1. Heat some olive oil in a pan and sweat the onions
  2. Add the carrots and celery, season with salt, pepper and a pinch of sugar, and simmer, stirring occasionally.  After 10 minutes, add the garlic and chilli and simmer for a further 20 minutes
  3. Deglaze with the white wine, stir in the tomatoes and simmer again for about 2 hours, stirring occasionally, then check seasoning
  4. In a separate pan, sear the vegan mince in a little olive oil to colour
  5. Fry the Stealth Fries according to the pack instructions and dress on a plate
  6. Pour some of the vegetable sauce over and top with the vegan mince
  7. Garnish with the grated Parmesan and fresh basil before serving
