Ras el Hanout & Yogurt

A cool yogurt and mayonnaise base with spicy Moroccan vibes.

Ingredients (500ml)

  • 365g mayonnaise
  • 100g full-fat yogurt
  • 10g Ras el Hanout spices (mix of cardamom, mace, cinnamon, ginger, allspice, cayenne pepper, black pepper, white pepper, anise seeds, cloves, turmeric and coriander)
  • 25ml sunflower oil
  • A dash of salt

Instructions

  1. Temper* the Ras el Hanout spices in sunflower oil.
  2. Allow to cool down a bit.
  3. Mix all ingredients.
  4. Add a dash of salt

Maple Syrup & Bacon

This Canadian-inspired sauce is the perfect enhancer for sweet potato fries. Mayonnaise base, with salty influences through fried bacon and a dash of maple syrup.

Ingredients (500ml)

  • 425g mayonnaise
  • 50g (fine, brunoise) bacon
  • 25g maple syrup
  • A dash of salt

Instructions

  1. Fry the bacon pieces in a pan.
  2. Let them drain on a piece of paper towel.
  3. Chop the bacon into small pieces
  4. Mix the mayonnaise, the chopped bacon and maple syrup and stir properly.
  5. Add a dash of salt.

Garam Masala

Did you know that “Garam” means “hot” and “Masala” means “mixture of spices”? This mix of black pepper, cinnamon, cardamom, curry leaves, cumin, coriander and mace is an amazingly fragrant and delivers a true Indian taste. You’ll be sure to impress your guests! 

Ingredients (500ml)

  • 465g mayonnaise
  • 10g Garam Masala spices
  • 25ml sunflower oil
  • A dash of salt

Instructions

  1. Heat up some sunflower oil in a pan to let aromas of the Garam Masala spices flourish.
  2. Allow it to cool down a bit.
  3. Mix all ingredients together.
  4. Add a dash of salt.

Ingredients (500ml)

  • 430g mayonnaise
  • 50g cream cheese
  • 10g salted and thinly cut lemon zest
  • 1g grated lemon zest
  • 10g lemon juice
  • A dash of salt

Instructions

  1. Whisk the cream cheese.
  2. Mix all ingredients.
  3. Add a dash of salt.

Soy sauce & Miso

Have you ever tried to combine mayonnaise and miso before? If not, you will be surprised by this japanese-inspired sauce. A little lime juice is used to give the sauce a final, fresh hint. 

Ingredients (500ml)

  • 450g mayonnaise
  • 30g soy sauce
  • 20g miso
  • A dash of salt
  • A dash of lime juice

Instructions

  1. Mix all ingredients.
  2. Add salt and lime juice to flavour.

Fennel seeds & Apricot

Ingredients (500ml)

  • 45g mayonnaise
  • 5g fennel seeds
  • 50g dried apricot
  • A dash of salt

Instructions

  1. Softly boil the dried apricots and fennel seeds.
  2. When the apricots are soft and ready to use, grind them together with the seeds in blender or kitchen machine.
  3. Allow to cool down a bit.
  4. Mix all ingredients.
  5. Add a dash of salt.

Cumin & Vadouvan (French Masala)

  • 435g mayonnaise
  • 50ml sunflower oil
  • 10g cumin
  • 5g Vadouvan spices (Fresh Masala)
  • A dash of salt

Instructions

  1. Heat the sunflower oil and use it to short temper* the cumin and Vadouvan (French Masala) spices.
  2. Allow to cool down for a little while.
  3. Mix all ingredients.
  4. Add a dash of salt.
