Hot smoked salmon and Twister Fries
Ingredients
Full of flavour and colour, with zingy horseradish mayo and fresh herbs
Serves 2
- 200g Lamb Weston Seasoned Twisters
- 150g hot smoked salmon flakes
- 50g diced cooked beetroot
- 3 rashers of smoked streaky bacon
For the Horseradish dressing
- 15ml horseradish sauce
- 15ml mayonnaise or Kefir yoghurt
- Juice of 1/2 lemon
- Season to taste with salt and pepper
Garnish
- Chopped dill
- Rocket leaves
Preparation
Method
- To prepare the horseradish dressing – mix together the mayonnaise, horseradish, lemon juice and season to taste. Swap out the mayonnaise for Kefir or Greek yoghurt for a healthy twist.
- Grill the bacon until crisp and snap into pieces.
- Fry or bake the Lamb Weston Seasoned Twisters until golden brown and set aside (Airfy: 10-18mins at 180 °C / Oven: 20mins at 200°C / Fry: 3:30mins at 175 °C).
- Top with the bacon, salmon flakes, beetroot and rocket leaves.
- Drizzle with dressing or serve on the side and garnish with chopped dill.
